Picked Some Rhubarb

We were off to a cold start, but it got warmer as the day went on.





After chores I picked some rhubarb as I thought I would make some cookies.  Did not need very much for the recipe.


I got out my notebook of recipes and there was a different one for rhubarb muffins.  Changed my mind.
Changed it again too, as a rhubarb cake seemed simpler than the muffins.
While it was baking I put together a burrito for lunch.
The cake turned out very well and I will definately do this again.  Light and delicious,
Here's the recipe.  So simple.  Just need to put some sugar on the diced rhubarb and let it sit for 30 minutes...and drain off any liquid before putting it in the batter.  Also have to bake it longer since it's not muffins.

It finally started warming up around 3.


Jenny joined us for dinner....ham and cabbage soup, cheese, apples and pumpernickel bread.
I did not go out to the barn until it was almost 8 and the light was spectacular.
