Today our temperature ranged from 56 - 68 and all afternoon I have been getting severe weather warnings that included lightning, flooding and a tornado watch. Fortunately the roughest weather is not right near us...but the warnings keep coming.
Little Wonder and I started out our morning in the usual way. He ate his carrots and took a nap on my lap.
Gary went out for coffee and then spent some time on the back porch. By then it was at least 60.
Kathy sent me a photo of Buddy, enjoying the warm temperatures before it started to rain.
I got things set up for music this afternoon.
John and Gary were not here and that left Nancy, Darryl and me....all playing ukes. Instead of doing our normal stuff I introduced them to a website from Wales called Ukulaliens. That's where I first learned to play the baritone base. The host not only teaches you, she posts dozens and dozens of videos that you can play along to. They are by the original artists and you can see the chords and lyrics. We must have tried at least 10 new songs that you could select from easy to more difficult. A great way to learn simple chords and sing along...we will probably be able to add a few to our playlist one of these days. It was fun to just mess around.
I had seen a recipe that looked pretty good, so I tried it tonight.
First I sautéed a shallot with mushrooms, then added spinach and a chopped tomato.
I put a burrito into a pie pan...
and added 3 eggs.....(Darryl brought us a dozen from his chickens today)
put in some cottage cheese
beat it together
then added my veggies.
Topped that with some cheese and put it in the oven at 350 for 30 minutes.
In the meantime, we kept getting weather alerts and the rain started up again. The volume is going to cause some flooding near here.
I took whatever you call this out of the oven and let if sit for a couple of minutes before serving.
It was delicious and I would do it again. Good for breakfast, lunch or dinner. You could put so many different ingredients in to make it interesting. Like bacon.
Now we are going to sit here and continue to enjoy the weather alerts....they are warning us about lightning in our area. I'm glad this does not bother Little Wonder!

What an interesting dish....and so little clean up! I never would have thought of cottage cheese in the dish.
