After chores I made a banana cream pie and chicken salad.
Ann, Hanny and Bobby arrived at noon for lunch and bridge.
I will guarantee you that this is the best chicken salad ever.
Ready?
I fried 12 organic boneless chicken thighs and set them aside.
In a large bowl I added:
3 celery stalks finely chopped
1 tablespoon minced sweet onion
1/2 cup craisins
1 1/2 cups sliced green grapes
2 diced apples
1 1/2 cups drained/crushed pineapple
Then I added the chicken/diced, a shot of poppyseed dressing and mayo to taste.
The plates were set up with chopped romaine, topped with poppyseed dressing before adding the chicken salad. Finished with sliced almonds and garnished with peach slices.
Salt and pepper as needed.
The dogs had a short outside break after we ate dessert....
then it was time for bridge. We jabbered 50% of the time and did not finish 'til 5!
We have ignored the garden and the zucchini should have been picked days ago.
I picked beets, cucumbers and started picking the yellow beans.
Right now I am working on pickled beets.
Gary worked outside all day....painting part of the Studio and sanding a couple
of chairs that we are painting for a fundraiser at the library.
Time for him to take it easy.

That sounds like a helluva good chicken salad! Gary does work hard he needs a day off. Love the new header too.
