Interesting weather today. In the 40s, pouring rain, then sunshine and finally....thunder/lightning/hail tonight.
Unfortunately I took the sheets off the horses as it was supposed to be in the 50s.
We had a bonus day in the blossom department.
By noon, it was grey with high winds and rain so the boys went back inside.
After skipping last month, I was finally able to have an appointment with the massage therapist. Boy! Did I need it. I called Gary before going home to have him let the horses out for awhile. The rain had stopped and sunshine appeared. It looked like this on the way home at 4:45.
As I got closer to the farm I pulled off the road to grab some photos.
Mary Pat was busy with friends all day.
It was close to dark when I headed out for evening chores.
I don't know how this happened, but the shot below reminds me of a painting.
When food is involved, Buddy and Rebel are always ready to get tucked in.
In the meantime....Mary Pat made us dinner. Simple and delicious. I will be making this in the future and you should try it too. Have no clue what it is called.
Ingredients:
1 box of pasta (she used bow ties)
Fresh spinach, cherry tomatoes (you decide how much....I would put in an entire clam shell of the spinach and load it up with cherry tomatoes) and Boursin cheese.
Pour a little olive oil in a lasagna pan , add the spinach and tomatoes then toss them together so they are covered with the oil.
Tuck in 2 squares of the Boursin cheese and put in the oven for 20 minutes at 350 degrees. In the meantime, prepare the pasta and then toss it with the spinach/tomato/cheese mixture. Salt and pepper to taste. It's nice and creamy.
