What's Cookin'?

 Did I tell you how much I love these cool days...high 60s and sunny...could not be more perfect.






I'm sure the girls are loving it too.

After chores I went down to Agape to get in some aerobic time.

Remember those strawberries I picked yesterday?
Today I turned them into a pie.
First I baked the crust.



In the meantime I put 1 1/2 cups + of strawberries and 3/4 cup of water in a pot.  Brought it to a boil and then added a mixture of sugar (1 cup) and corn starch (3 Tablespoons).  Stirred that for a few minutes and added 1 Tablespoon of fresh squeezed lemon juice.  Let it simmer until it thickened.

 Let the pie crust cool....
 measured up 3 cups of fresh strawberries...
 put them in the pie crust....
 and topped it with the strawberry glaze.
 Voila!  One fresh pie!
 Spent some time reading and then got dinner ready.


 Grilled organic chicken, Bazmati rice with peas and a salad with apples, pears and peanuts.
 Tucked the girls in at 7...


 and had just enough time to whip some heavy cream for the pie.  Tina and Roger came over to test it for me.  You would have loved it.
