In the 60s today. The sunrise was beautiful. Unfortunately I woke up at 5 and could not get back to sleep.
By the time I went out to the barn is was so bright.
The boys were in the pasture and I got most of the chores done before they came in for breakfast.
I wanted to make some gazpacho soup today and went out to pick some of our San Marazano tomatoes. I swear....each one weighed a pound.
I did look at a bunch of recipes and then decided to do my own thing in whatever proportions.
Tomatoes, a stalk of celery, 1 pepper, a small onion, one clove of garlic and 3 small English cucumbers. I did not have any old crusty bread, so I toasted a crust of bread and added it to the mix. A little parsley, salt, pepper, a shot of red wine vinegar and finally a 1/4 cup of olive oil. Put it all in a food processor and pureed it. In the frig for several hours.
Had a great talk on the phone with one of my blogging friends who lives in Minnesota. I don't get to have live conversations like this very often and it is always very special. Usually, most communication is done through commenting.
It was bridge day at the library. We had a great time and laughed so much. All of us are in our 70s or 80s and decided we should go for a visit to memory care. Ran an errand on the way home. Chores before dinner.
Little Wonder did go out with me and waited for his dinner before we ate ours.
Why did I not make this soup when it was so hot this summer? So refreshing. I made some croutons out of leftover Tuscan bread, added chives and a little sour cream. Very light.
It's chilly now.
Night all.

I have not tried gazpacho but I must say it looks good! I am one of the rare people who still like to talk on the phone. Messaging is fine but talking is so much finer. It really greened up fast after your rain.
