When The World Gives You Lots of (lemons) Zucchini, Make (lemonade) Zucchini Bread

 No complaints here, it was a beautiful day.


 I started mowing this morning...and got half of it done.


 Sara came up to get some garlic and we gave here some other veggies too.  Jenny stopped by at the same time.
 Seeing that we had an abundance of zucchini, I decided to grate several so I could put it in the freezer.  Made sure it drained well first, and got enough for 6 loaves of bread.
 Last week I got a recipe from Jean (Down under) who got it from Gayle (in Alaska).  Both are blogging buddies.  Never was much of a baker, but decided to give it a shot.  Here is the recipe.  Have no idea where it originated.

1 1/2 cup all-purpose flour, 1/2 teaspoon baking soda, 1/4 teaspoon baking powder 1 teaspoon ground cinnamon, 1/4 teaspoon salt, 1/4 teaspoon ground nutmeg (I didn't have any), 1 cup finely shredded unpeeled zucchini (did it in food processor and drained it), 1/4 cup cooking oil, 1 egg, 1/4 teaspoon finely shredded lemon peel (didn't have a lemon, used a splash of lemonade).
I put all the ingredients in a big bowl and mixed....guess you are supposed to mix everything and then add the flour. (Can you tell I am not a baker?)
Pour into greased loaf pan and bake at 350 degrees for 55 or 60 minutes or til a toothpick inserted near the center comes out clean.

 Cool for 10 minutes
 then remove bread from pan and let it cool thoroughly on a wire rack.

After that I went out
 and mowed the rest of the pasture.
 Now it's all beautious.

Yesterday we had 5 face cords of wood delivered and Gary spent most of the afternoon stacking it.
 It started to sprinkle, so he still has a little more to do.
 Leftovers for dinner.

In case you are interested, we have been getting some press since I spoke to the Town Board about the Senior Center.  I also had a meeting with the Town Supervisor Thursday afternoon and it looks like we are going to have a committee to work on this.  I even had a call back from the Rochester Democrat and Chronicle last night.  They seem interested.

  Maybe the rain is going to hold off until tomorrow.

  4. I'm on a blogging catch-up session! We are swamped with zucchini/courgettes here too, so much so that when people see my friend MC now they turn and run in case she gives them courgettes! I found a couple of good pickling recipes, and an especially nice one for pickles cucumbers. Message me if you'd like the links.
