so I decided to let you in on what's for dinner tonight.
You're all invited! Tonight we are having a simple pasta dish that you can make from things you always have in your pantry and frig. White Pasta ala Skoog.....
You can't have pasta without serving a salad. This is romaine, 1 plum tomato, red onion, a piece of celery chopped fine, crumbly blue, homemade croutons (baked with seasonings...bread that was left from a dinner party) and tossed with an Italian dressing.
First I saute 1 good sized onion and about 10 mushrooms in a little olive oil. In the meantime I have chopped up a large carrot and am boiling it in a small pot until it is just getting soft. Then, I turn off the heat and throw in a cup of frozen peas...put the cover back on and let it sit until the pasta is done. Drain the peas and carrots and add them to the onions and mushrooms.
When the pasta is done, add it to the veggies and splash with a little olive oil and a tablespoon of butter. Add some fresh ground pepper and 1/2 cup of Pecorino Romano cheese. Toss and serve.

ReplyDeleteHere the snow has come, it may seem mere for you but here the highways and the roads have been crowded with cars and lorries across the way. Some people have deserted their car to spend the night in an open room in the cities for they could not drive back home...
There have been many traffic jams. The schools are closed for two days. But I cannot go to the equestrian club for we cannot drive up the hill to leave home.

I can't even show my husband the wonderful things you cook...his mouth waters too much. Sure wish I liked to cook. That looks pretty tasty.
