My Version of Taco Salad

A very nice morning.
The girls were all out in the arena rolling and kicking up the sand.

Gary has been doing a lot of work in the gardens and has started eliminating all the crapola growing around the trees in the side and front yards.  The drought has taken it's toll on our little fruit trees and I am afraid the smaller cherry might not make it.

 Class at 10:30.

Today I  welcomed Jean, who is a new student.
The last time she took an art class was in 1980 and it happened to be from a friend of mine who taught at the college.  I start everyone off with contour line drawings, and as you can see....
it was a piece of cake for her.
I vegged part of the afternoon and we had an early dinner.
Tonight...a vegetarian taco salad.  (not your normal)
For my base, I used a combination or our romaine and red leaf lettuce.
Topped it with the bean salad I had already made a few days ago.
Then I added tomatoes, green peppers (our garden) and cheddar cheese.

Added crushed blue corn chips and sour cream...

and here is the weird part...top it with some Catalina dressing.
I just realized that I forgot to put on the salsa!!!!!
 Oh well....it tasted great.
Night all.

  3. Looks good. You should check out a recipe for Seventh Day Adventist, "haystacks". It's a vegetarian taco salad that's so good!
