I have to start with last nights moon. I took the picture around midnight and did not have the energy to edit my post. It was a beauty.
I don't think they cared one way or the other.
It rained, but today it was gorgeous and a little cooler.
After chores I picked some berries....
two zucchini...
and more spinach. Pretty soon the garden will be overflowing.
On my way to Agape I passed many bikers who were getting water from the Walk!Bike! Brockport volunteers. Each summer there is an event called "Cycling the Erie Canal." 500 cyclists start off in Buffalo and spend the week getting to Albany. That is a 400 mile trip! This year there are participants from 36 states and several countries. Being the hospitable community that we are, we greet every single one and supply them with bottled water and information about our village.
On my way back from Agape, there were bikes parked in front of all the restaurants and stores.
This biker was in front of me as I was leaving Wegmans.
Tried a new recipe today...I'm not good a following directions.
It is called "Summer Vegetable Tian" and was put out by Budget Bytes at http://www.budgetbytes.com
First I sliced up (thinly) 2 potatoes, 1 tomato and a medium zucchini. Also called for yellow squash but I did not have one...so I used 2 potatoes instead of one.
In the meantime I sauteed 2 medium onions until the were translucent. (Called for one onion and a tsp. of minced garlic).
Put the onions in the bottom of a pie plate then added the veggies. Keep them upright and sprinkle generously with salt, pepper and thyme ( I had no thyme).
Cover with foil and bake for 30 minutes at 400.
remove foil
and add 1 cup of shredded Italian cheese (didn't have any, used what was here).
bake for another 15-20 minutes or until cheese is golden brown (uncovered).
If I made this again, I would add another tomato and would put sliced onions in the mix as well as on the bottom. Without the thyme, it needed more zip...Will rework it next time as the ingredients are perfect for a side dish.
Gary grilled a slice of ham, basted with a mustard/brown sugar sauce, and of course we had a salad.
Chores at 7:15. Great temperature...the girls were loving it.
Tucked them in and took a nice hot shower.

Delish meals, horses glowing in the sunshine, and a garden full to overflowing, that recipe is one for me to try when zucchini season is here again . Jean
ReplyDeleteSummer at Skoog Farm - so delightful that I wish I was there - I'll have to play with that recipe - looks like it could be a good one - I wonder if fresh basil would work instead of thyme. I grilled an eggplant, yellow squash and some red peppers and then added tomatoes, basil, onion and garlic- keeping the mishmash in my fridge and adding it to everything - eggs, pasta, sandwiches. Ah summer!
