Going In The Right Direction!

 This was a beautiful day.  Strong sunshine and a high of 24.






At noon we went down to the Rec Center to watch Finn's basketball game.  He played well and made several baskets, but they lost by 5 or 6 points.  
 Tomorrow Cooper is participating in a wrestling tournament.  That should keep him busy.
 I was up half the night thinking about how we can get rid of all the junk that has accumulated in the house and in Gary's barn...could not turn my brain off.  So when we got back to the farm I was ready for a nap.

Chores at 5:45.
 I can't believe how close we are to daylight saving time.
 I'm sure the girls enjoyed sun bathing today.





 The sky was still gorgeous when I headed back to the house.

 Late this morning I used the stock created yesterday (cauliflower etc.) to make a big pot of minestrone soup.
 Served it with extra sharp cheddar cheese, apples and homemade wheat bread.
Easy and delish.
Time to get back out by the fire.
Night all.
It is now 8 degrees and we are supposed to get up to 30 tomorrow.

Have We Reached A Turning Point?

Of course I am talkin' about the weather.
 It was still very cold this morning, but there is something about the powerful rays being sent out by the sun.  Different.

 It even had an impact on my fruit basket in the kitchen.





 The snow in the back yard is still higher than the dog's backs.


Here's a foodie alert for my vegetarian friends....
This is one of my inventions and I think you would like it.
Basically, it is a cauliflower casserole.
In a pot, I put one entire cauliflower (flowerettes) 2 onions, 1 stalk of celery and lots of carrots.
 When it is tender, remove from pot and reserve stock.
 Make a white sauce using some of the stock and finish with a little milk.
 Add grated extra sharp cheddar cheese.
 Blend.
 Pour over veggies.  Add salt and pepper to taste and place in oven at 350 until bubbling (35 or 40 minutes).  I covered it with tin foil.
 In the meantime, boil 2 or three eggs and put them on top of the casserole for the last 5 minutes.
 Delish.

 I also attempted to make whole wheat bread in the bread machine.  Turned out pretty well.
 Gucci was assisting.

 The sun had me so motivated I changed around all the furniture in the kitchen.


 Chores at 5:30.  Pretty crispy out there.



 Did not need to turn on the lights in the barn.




 Dinner? 
 A green salad, cauliflower casserole and homemade bread with pepper jelly.
 Phoebe and Gucci split some scrambled eggs.
